Network Abuse Departments search site. Just use the domain name of the offending spam source, and if there's an abuse department to report it to, you'll find it there.

once you reply, they have just confirmed the validity of your email address, and "that's all she wrote."

There are many sites, that offer info on who/what/why & how they SPAM.
(observe the links on the above sites.)
Still, one of the best ways to 'protect' yourself, is to be veeeeery chosey about which sites you give your personal info to.
Especially your email address...
AND, please use your "BCC" [Blind Carbon Copy] option when sending to more than one email address. it hides the addresses of innocent friends and family, when spam harvesters may be scanning systems mail for new addresses to spam.
