Sour Cream Coffee Cake

2 cups flour

3/4 cup sugar

1 tsp. baking powder

1 tsp. vanilla

1 tsp. baking soda

3 eggs

1/2 cup shortening

1/2 pint sour cream

Brown Sugar Mixture

1 stick margarine, melted

1 cup brown sugar

2 tsp. cinnamon

1 cup chopped nutmeats

  1. Preheat oven to 350 degrees.
  2. Grease the sides of a spring form pan. Line the bottom of the pan with greased parchment paper.
  3. Prepare brown sugar mixture.
  4. Combine flour, baking powder, and baking soda.
  5. In separate bowl, cream shortening, sugar, and vanilla
  6. Add eggs and beat well.
  7. Add flour mixture alternately with sour cream. Blend well after each addition.
  8. Pour half the batter into the pan.
  9. Sprinkle the batter with 1/3 of the brown sugar mixture.
  10. Pour remaining batter and top with remaining brown sugar mixture.
  11. Bake for 50 minutes.
  12. Allow to cool before removing from the pan.

Mother's Bread Recipe

For a little more fiber, you may substitute up to 2 cups of wheat flour for bread flour.

6 cups flour (bread flour is best)

2 tsp salt

2 eggs

½ cup sugar

2 cups milk

2 packages active dry yeast

1 stick (1/2 cup) margarine

Scald milk. Blend sugar, margarine in scalded milk. Blend yeast, salt, flour in large bowl. Make a well and drop in eggs. Blend everything together. Let rise. Make into appropriate shapes. Let rise again. Bake 20 minutes for cinnamon rolls, 25 to 30 minutes for loaves.


Banana Bread

2 cups flour

1 tsp baking soda

1 tsp baking powder

½ tsp salt

½ cup nuts

2 large ripe bananas

1 cup sugar

3 large eggs

1 stick unsalted butter, softened

½ cup buttermilk

2 tsp vanilla

Mix dry ingredients together, except sugar. Blend bananas and add sugar gradually. Add eggs one at a time. Add butter to mixture. Next add buttermilk and vanilla. Quickly add dry mixture. Don't overmix, stir in. Pour into 7 cup loaf pan. Bake at 350 degrees for 1 hour.


Brioche Loaf (bread machine recipe)

Small loaf – 1 pound (large loaf – 1 ½ pounds)

1 ¼ tsp (1 ¾ tsp) active dry yeast

1 ¼ cups (1 ¾ cups plus 2 tbsp) bread flour

2 tbsp (3 tbsp) sugar

1/2 tsp (3/4 tsp) salt

1 (2) whole egg(s)

1 (1) egg yolk

¼ cup (1/4 cup plus 2 tbsp) water

6 tbsp (8tbsp) unsalted butter

1. Add all ingredients except butter in the order suggested by your bread machine manual and process on the basic bread cycle according to the manufacturer's directions.

2. Cut the butter into tablespoon-size pieces. About 10 minutes before the end of your first kneading cycle, begin adding the butter, 1 tablespoon each minute. Do not rush it. Let the machine continue its process.

3. At the end of the entire cycle, let the brioche cool in the opened machine about 20 minutes. This will keep the sides firm while the center stays moist.


Cottage Cheese and Herb Bread

¼ cup warm water

1 package (1 scant tablespoon) active dry yeast

½ teaspoon sugar

1 egg

1 tablespoon melted butter or margarine

1 teaspoon salt

1 cup low-fat cottage cheese (preferably small-curd)

¼ teaspoon baking powder

¼ cup minced shallots, sauted in 2 teaspoons butter or margarine

¼ cup snipped fresh dill or 2 teaspoons dried dillweed

¼ cup soy flour or any other type flour

2 ¼ cups all purpose flour

  1. Place the water in a small bowl, and slowly add the yeast and sugar to the water, stirring the ingredients to dissolve them. Let the yeast stand for 10 minutes or until it is bubbly.
  2. In a large bowl, lightly beat the egg. Add the butter or margarine, salt, cottage cheese, baking powder, shallots, and dill, and mix the ingredients thoroughly. Stir in the proofed yeast, the soy or another flour, and enough of the all purpose flour to make a soft dough.
  3. Place the dough in a greased 1 quart baking dish. Cover the dish with greased wax paper and a dishtowel. Set the dough in a warm, draft-free place of 1 hour or until the dough has doubled in bulk.
  4. Preheat the oven to 350 degrees F.
  5. Place the dish in the hot oven, and bake the loaf for 1 hour or until the loaf sound hollow when it is tapped. Turn the loaf out onto a rack to cool completely.

Zucchini Bread [2 loaves]

3 eggs

2 cups granulated sugar

1 cup vegetable oil

2 cups grated, peeled raw zucchini

3 teaspoons vanilla extract

3 cups all purpose flour

1 teaspoon salt

1 teaspoon baking soda

¼ teaspoon double-acting baking powder

3 teaspoons ground cinnamon

1 cup coarsely chopped filberts or walnuts

Beat the eggs until light and foamy. Add the sugar, oil, zucchini, and vanilla and mix lightly but well. Combine the flour, salt, soda, baking powder, and cinnamon and add to the egg-zucchini mixture. Stir until well blended, add nuts, and pour into two 9x5x3-inch loaf pans. Bake in a preheated 350 degree oven for 1 hour . Cool on a rack.
