The
servery in the Tavern is quite light and airy compared to those of
most
establishments, its shape a graceful octagon which is entered from
the
far corner of the main room, and close enough to the seating areas
that
a Master might watch his girl as she serves him. The center of the
octagon
is a huge central hearth and chimney, large enough to spitroast
a
half bosk. The hearth wall is built of cleanly dressed gray green
stone
from the Voltai mountains, and a polished bronze hob for kettles
of
steaming blackwine rises at the near edge. Full bags of paga lie
warming
on the hearthstones, and others hang from the beams above in
neat
order. The side of the octagon furthest from the seating area
contains
the cold room, the smooth slate floors of the servery chilly
underfoot,
ice blocks radiating cool to the chilled paga, bosk steaks,
verr
butter and vulo eggs stored there. The rest of the octagon is
ringed
with various counters of a smooth green marble, the cabinets
below
well-stocked with all manner of kitchen implements save of the
sharp-edged
variety. Serving dishes for prepared food and beverage are
arrayed
in glass fronted cabinets for the kajirae to find easily. The
general
quality of the service wear reflects excellent taste and
austerity,
as though no expense was spared to achieve the desired
effect
and longevity of the style. Dry goods and spices are arrayed in
a
pantry cupboard along the left wall, convenient to the grilling and
cooking
area of the hearth. Huge basins of Thassan sandstone serve as
the
sinks, the pitchers of washwater and aromatic soaps alongside,
folded
stacks of woven flax towels stand on the shelves above the
basins.
