Way back in high school, I was going to an "International Dinner" and needed a dessert from a foreign country to bring along. I found this recipe in one of my grandmother's cookbooks, and have been using it ever since. I never knew why the dessert was called "English Matrimonials," but my brother found the same thing in his college dining hall as "Raspberry Yahoos"!Another dessert that brings back fond memories is Chocolate Marshmallow Cake. Because it was traditional fare at the annual Memorial Day picnic, I now call it:English Matrimonials
1 1/4 cup flour
1 1/4 cup rolled oats
1 cup brown sugar, packed
1/2 teaspoon salt
3/4 cup butter
3/4 cup raspberry jam
Preheat oven to 350 deg. Mix first five ingredients together until the mixture is crumbly. Press half the mixture into an 8"x8" or 9"x9" baking pan. Spread the raspberry jam on top of this layer. Sprinkle the remaining crumb mixture on top of the jam; press down gently. Bake at 350 for 40 to 45 minutes, or until the top is golden brown. Let cool before cutting into squares.Enough nostalgia! 1 box devil's food cake mix
1 10-oz bag [regular-size] marshmallows
1 can chocolate frosting
Prepare the cake mix according to the directions on the package, using a 9"x13" baking pan. WHILE THE CAKE IS IN THE OVEN, cut all the marshmallows in half crosswise. As soon as the cake comes out of the oven, while it is still hot, place the marshmallow halves sticky-side down on the top of the cake, as close together as possible, covering the whole top of the cake. Let the cake cool, and frost with the frosting.
