Did you know that eggs are actually a seasonal food?

I had no idea until I had heard some food-person on the radio explain that chickens don't lay eggs in winter. That is, until people discovered electricity and invented the light bulb. Chickens register 'winter' not by temperature, but like many animals, they do so by registering the amount of sunlight in a day. So, with artificial light we have eggs all year round. We also probably have deranged chickens but that's something I don't like to think about.

If I had the will, I would have researched all the traditional Christmas foods to see if any of them have 'eggs' in the recipes.

(They do. Evidently eggs store very well)
