Southern Cuisine: Here are some of my favorite dishes that I have enjoyed. I will give you both the Traditional, and if possible the new Non-Traditional way's of Cooking these dishes. Some were/are very fattening.
I was born, raised and will most likely die in the South. I have a great love and appreciation of our heritage, and tradition's. Part of that heritage and tradition is the way southerner's cook, our cuisine is unique due to the bountiful rich harvest of fresh vegetables, spices, fruit's, wild game and livestock that we have been blessed with.
Other parts of the country have allot of these same things available to them, so what makes the South different? In many way's it's the way the food is cooked, the spices blended and others are just unique to mainly the south, grits and boiled peanuts for example. Why is Southern Fried Chicken so great? I'm sure before Col Sander's that other parts of the country did in fact fry chicken, so why did his small restaurants become the rave? The taste, the flavor, and the side dishes that went along with it.
What today many people call ethnic Soul Food, is just what we called good ole' country cookin'. It's the way my grandmother taught me how to cook. The most important ingredient found in all of her cooking couldn't be bought in any grocery store though, that ingredient was love. Not just the love of cooking, but the love of the people she are cooking for. And she passed that on to me.
