Pudding Fudge
Makes 24 servings
1 box (4 serving size) chocolate regular pudding mix (not instant)
1 cup granulated sugar
1/2 cup milk
1 tbsp butter
In a heavy saucepan over medium-high heat, stir together pudding mix, sugar and
milk until mixture reaches 238 degrees on a candy thermometer or to the soft ball stage. (This is when a drop of the mixture forms a soft ball in cold water but goes flat when removed.) Remove from heat. Put butter on top but do not stir; let it melt naturally. Cool to room temperature. Scrape mixture into bowl; beat at medium speed until fudge starts to lose its gloss, about 6 minutes.
Pour into a buttered, 8" square pan. Makes about 12 ounces or 48 pieces, about 1" x 1 1/4".
