Green Bean Casserole

4 (9oz.) boxes frozen French style green beans, cooked and drained

1 (10oz.) can cream of mushroom soup (undiluted)

1/2 tsp. salt

1/4 tsp.pepper

1 (3oz.) can french fried onions

 

Combine all ingredients except onion rings. Spoon into a greased shallow 2 quart casserole. Sprinkle onion rings evenly over the top. Bake at 350 for 30 minutes. Yields about 12 servings

Scalloped Potatoes

3 tbsp. butter

2 tbsp. flour

1 1/2 tsp. salt

1/8 tsp. pepper

3 c. milk

6 medium potatoes, thinly sliced

2 c. chopped onion

Make a white sauce out of the butter, flour, salt, pepper, and milk. Place a layer of potatoes in a 2 quart greased casserole dish. Cover with a layer of onions and sauce. Repeat layers. Cover and bake at 350 for one hour.(To make a main dish, add slices of ham in each layer and end with potatoes on top.Pour some sauce over the top layer of potatoes. Also, use less salt if adding ham)

Beef & Pepper Rice Skillet

1 1/2 lb. round steak, cut in thin strips

2 tbsp. cooking oil

1 c. sliced onion

1 c. Uncle Ben's converted brand rice

1 c. (10oz.) beef broth

1 soup can of water

3 tbsp. soy sauce (or to taste)

2 green peppers, coarsely chopped

Brown beef in oil in 10 inch skillet. Stir in onion, rice, beef broth, one soup can full of water and soy sauce. Bring to boil. Reduce heat, cover and cook over low heat until liquid is absorbed, about 25 minutes. Stir in green pepper. Heat through. Makes 4 to 6 servings

Potato Soup

3 large potatoes, peeled and cubed

1 onion, chopped

2 chicken bouillon cubes

1/2 tbsp. parsley flakes

1/2 tsp. salt

3 cups water

1/4 c. margarine

1/8 tsp. pepper

3/4 c. milk

1/2 c. flour

3 celery stalks, chopped

Combine the margarine, flour and milk. Then add water, potatoes, celery, onions, bouillon cubes, parsley, salt, and pepper.Bring to a boil. Cover and simmer over low heat for 30 minutes or until done. For a larger amount, just double the ingredients.
