Kitchen Supervisor, Assistant Food and Beverage Director :Bullets/Breakers Restaurant.

A part time position, (30 to 35 hours a week) position increased to a 60 to 65 hour / week position with conversion of previous semi-full service food operation to a prototype franchise operation. After prototype period was completed, returned to a new "Breaker's" concept based upon concepts and prodution systems gathered from Bullets for sandwich prodution, as well as use of Domino's systems for pizza.Supervise all employees (up to 3 cooks, two counter staff/cashiers, two servers and entry level employees) in absence of Food & Beverage Manager. Responsible for training all current staff. Maintain specified food and labor cost percentages while maintaining service level consistent with a "borderline country club" atmosphere. Implementaion and data base programing of Food cost analysis software (Creative Concepts' Food-Trak for DOS), data gathering, as well as in-house training tools, internal advertising, training, and data gathering materials with Microsoft Office Suite, Microsoft Publisher as well as Mac programs at home.

Achievements

¥ Reduction of overall food costs percentages from average of 41% (Feb) to July total of 29.5%

¥ The management team's tranformation of Breaker's into Bullets prototype within 55 days. (Normal time is 120 to 160 days.)

¥ Operation succesfully competed Bullets Corporation Franchise "Hand holding" stage in 20 days less than the normal time for first time franchisees.

¥ The Bullets Prototype as implemented here is currently being evaluated by AMF Corporation for inclusion in over 150 Bowling centers nationwide and in Canada.

 

Albemarle County Schools, Charlottesville, Va. Oct.,96 -March,97

Computer Lab Teaching Assistant, Paul H. Cale Elementary.

A part time position, (2&3/4 hrs. a day.) assisting students and teachers in use of 15 lab units and 40+ classroom computers connected in an ethernet network. Evaluation of demonstration software to help determine cost vs. benefit for single or multiple copy purchase and integration into curriculum. Assist older grades with multimedia authoring programs and teach lower grades how to operate programs, save and transfer files over the network. Achievements

Assist in the setup of a commercial video store web sight. Involves learning to maximize content, while keeping in mind the bandwidth limitations of the average Internet surfer ( connection speed, time to download pictures and formatted text), establish common denominators for pleasing presentation across multiple browser/ computer platforms. Involved learning much of the HTML3.x specifications as well as Pop Mail, Netscape Tags, And E-Mail protocols. Use of various word processing, Image creation and editing, and format conversion software Also worked shifts in the Monticello Road branch of the company's video store.

Weekend relief manager / clerk

Work with little or no supervision in a small neighborhood retail convenience store with ABC off-premises Beer license. Work long shifts of 11-12 hours in which there is little time for bathroom or meal breaks. Handle cash, approve checks, and credit receipts, as well as vender payouts while practicing cash and property security measures. Maintain store displays of featured items,as well as stocking beer, soda, and juice/sports drink coolers. Extensive customer service interaction with established clientele as well as providing accurate directions to local tourist landmarks for transient individuals.
