Lacto-Vegetarian: A person who eats no meat, fish, fowl, animal byproducts (such as gelatin), or eggs, but does eat dairy products.
Lacto-Ovo-Vegetarian : A person who eats no meat, fish, fowl, animal byproducts (such as gelatin), but does eat eggs and dairy products.(or general vegetarian)
Vegan: A person who eats no animal products at all (no meat, fish, fowl, dairy, eggs, or other animal-derived ingredients such as honey). Often, vegans do not wear or use products derived from animals, such as leather.
Egg Replacer aka Egg Substitute: Any substance used to replace eggs in a recipe. Common egg replacers include commercially available products like Ener-G brand. Homemade egg replacers include such items as flaxseeds and applesauce.
Soy Cheese:Products which substitute for dairy cheese and available in a wide variety of flavors, often containing tofu or cashews.
Sucanat:A brand-name granulated form of unrefined cane sugar, made from cane juice. Imparts many of the same characteristics as brown sugar (which can be substituted for Sucanat on a one to one basis). Found in health food stores.
Tofuaka Bean Curd: A versatile and protein-rich soybean curd available in many different textures (according to how much water it contains) and flavors. Firm tofu is ideal in stir-fries and barbecues, while silken tofu is perfect for creamy foods and drinks, such as beverages, puddings, and cheesecake. Because of its mild flavor, tofu easily absorbs flavors from marinades.
Seiten (SAY-tan) aka Wheat Gluten, Gluten :A chewy, high-protein often used as a meat substitute. Available refrigerated in chunks and various flavors, including teriyaki and barbecue. Mixes are available to make this at home, or it can be made from scratch using flour.
Tempeh (TEHM-pay):A high-protein fermented soybean product, often found in patty or cake form.
TVP (texturized vegetable protein):Made from soybeans, TVP usually comes in a dried form and must be reconstituted in water. It is available in many different sizes and shapes, from powder to chunks, and in flavors like beef and chicken.
