Double Chocolate Cupcakes

1½ cups all-purpose flour
½ cup granulated sugar
¼ cup unsweetened cocoa
1 teaspoon baking soda
½ teaspoon salt
½ cup unsweetened orange juice
1/3 cup water
3 tablespoons vegetable oil
1 tablespoon vinegar
1 teaspoon vanilla
1/3 cup semisweet chocolate mini-chips
1 teaspoon powdered sugar

Preheat oven to 375 degrees. In a medium bowl, combine flour, sugar, cocoa, soda and salt; make a well in centre.

In another bowl, combine orange juice, water, oil, vinegar and vanilla; add to dry ingredients, stirring just until moistened. Fold in chocolate chips.

Spoon into foil or paper-lined muffin pans, filling 2/3 full. Bake for 12 minutes or until a wooden pick inserted in centre comes out clean. Remove from pans immediately; cool on a wire rack. Sprinkle with powdered sugar. Makes 1 dozen large, 2 dozen small cupcakes.
