Fried Fillet Lake Superior Whitefish

1½ cups peanut oil
1 cup yellow cornmeal
½ teaspoon paprika
Salt and pepper
4 medium pieces Lake Superior whitefish (see note)
Hot pepper sauce

    Heat oil in 12-inch cast-iron skillet to about 350 degrees.

    Meanwhile, combine cornmeal, paprika and salt and pepper to taste in paper or plastic bag. Add fish, 1 piece at a time, and shake gently until coated.

    Place fish in hot oil and reduce heat to medium. Fry until golden brown on all sides and fish flakes easily with fork, carefully turning as needed. Serve with hot pepper sauce. Makes 4 servings.

Note: If Lake Superior whitefish is unavailable, substitute snapper or cod.
