Roasted Garlic

4 whole heads garlic
4 to 6 tablespoons butter, softened
4 sprigs fresh oregano

    Preheat oven to 325 degrees or prepare charcoal fire in the grill.

    Peel back skin from outer cloves, removing papery skin. Rub garlic heads with butter. Tuck a sprig of oregano into each head. Seal heads in aluminum foil and bake 1½ hours or until soft. Or place foil packet on grill in a spot not directly over hot coals and cook 1½ hours. If desired, open packets halfway through cooking time and baste garlic with its own juices.

    Open packet and squeeze cloves from skins. Serve with juices from packet. Makes 4 heads.
