Zucchini Bake

1 pound zucchini, shredded (3 to 4 cups)
3 eggs
1 small onion, grated (2/3 cup)
1/3 cup buttermilk
2 tablespoons vegetable oil
½ cup freshly grated Parmesan cheese
1 cup biscuit mix

Preheat oven to 350 degrees.

Spray a 9-inch pie pan or 11-by-7-inch baking dish with non-stick vegetable cooking spray; set aside.

In a large bowl, combine zucchini, eggs, onion, buttermilk, oil, Parmesan cheese and biscuit mix well. Pour into prepared pan.

Bake for about 1 hour, or until lightly browned. Let rest 5 minutes before cutting into 6 servings. Makes 6 servings.
