Recipe:

1) Rice with Chicken and Mushroom

Ingredients:

4 small Chinese mushroom

1 stalk spring onion

250g chicken thigh

3 slices ginger

180g long grain rice

190ml water

Sesonings for chicken:

1/8 tsp salt

1/8tsp sugar

1/2 tsp light soya sauce

1/4 tsp cornflour

1 1/2 tbsp water

1/2 tsp Chinese wine

2 tsp oil

Sauce:

1 tbsp light soya sauce

1/2 tbsp hot water

2 tsp cooked oil

Method:

1. Soak Chinese mushroom. Cut into quarter when softened.

2. Cut spring onion into sections.

3. Bone chicken thigh and cut into mouthful sizes.

4. Season chicken pieces. Add Chinese mushrooms and ginger slices. Mix well and leave to marinate for at least 15 mins.

5. Rinse rice. measure water to rice and put to boil in a rice cooker or in an eartherware pot.

6. Boil rice until water is partly absorbed and holes appear in the rice, add the marinated chicken meat and mushrooms on top of the parboiled rice. Keep covered and simmer for a further 12 to 15 mins.

7. Stir and loosen rice with chopsticks. Add sauce, mix well.

8. Sprinkle in spring onion sections and serve hot.
