Recipe-- Cold Sweet

10) Chocolate Mousse

Ingredients:

75 g plain chocolate

3 tbsp water

1 tsp powdered coffee

3 eggs

1/4 tsp vanilla essence

1 tsp gelatine

1 tbsp water

Method:

1. Break the chocolate in small pieces into a basin set over a pan of boiling water. Add water and stir until the chocolate is all melted.

2. Add the coffee and essence to the egg yolks and whisk the mixture over hot water until thickens.

3. Stir in the melted chocolate, whisk well. Remove from the hot water, stir in gelatine solution.

4. Beat the egg white until stiff and fold into the chocolate mixture.

5. Pour into one large or 4 small glass dishes and chill in the fridge before serving.
