11) Roast Chicken

Ingredients:

1 chicken (for roasting) (1- 1 1/2 kg)

75 g magarine

1 potato

Stuffing:

50 g breadcrumbs

1 tbsp magarine

1/2 to 1 egg

1/2 chopped onion

1 tbsp chopped parsley

salt and pepper

Method:

1. Wash and dry the chicken.

2. For stuffing: Mix all dry ingredients and bind with beaten egg.

3. Stuff the chicken. Peel potato.

4. Trussing: a) with Trussing needles and String. b) with shewers.

5. Preheat oven at 200C (400F) or No. 6.

6. Roast chicken with potatofor 50- 75 mins (25 mins to each 500 g)

7. Serve hot.

Accompaniments:

Thin gravy, baked sausages, bacon rolls, potato crisp, lettuce salad
