2) Stir-fried Rice Noodles with Beef
Ingredients:
80g beef
80g sliver sprouts
3 slices ginger
1 stalk spring onion
10g chive shoots
1 clove garlic
350g fresh rice noodles
Seasoning for beef:
1/3 tsp salt
30 ml water
1 level tsp cornflour
1 tsp oil
Sauce:
1 tbsp dark soya sauce
1 tsp light soya sauce
Method:
- Clean, slice and marinate beef with seasonings.
- Rinse and drain silver sprouts.
- Shred ginger and spring onion. Cut chive shoot into 25 mm
lengths. Cruch the garlic.
- prepare sauce ingredients in a bowl.
- Heat 1 tbsp oil in work, add in crushed garlic and
slightly stir-fry the beef slices. Dish for use later.
- Heat another tablespoon oil in wok, stir-fry silver
sprouts, ginger and spring onion shreds for 3 mins. Add
fresh rice noodles and sauce, stirring all the time.
- When almost cooked, add in sliced beef and chive shoots,
mix well. Dish and serve hot.
