2) Stir-fried Rice Noodles with Beef

Ingredients:

80g beef

80g sliver sprouts

3 slices ginger

1 stalk spring onion

10g chive shoots

1 clove garlic

350g fresh rice noodles

Seasoning for beef:

1/3 tsp salt

30 ml water

1 level tsp cornflour

1 tsp oil

Sauce:

1 tbsp dark soya sauce

1 tsp light soya sauce

Method:

  1. Clean, slice and marinate beef with seasonings.
  2. Rinse and drain silver sprouts.
  3. Shred ginger and spring onion. Cut chive shoot into 25 mm lengths. Cruch the garlic.
  4. prepare sauce ingredients in a bowl.
  5. Heat 1 tbsp oil in work, add in crushed garlic and slightly stir-fry the beef slices. Dish for use later.
  6. Heat another tablespoon oil in wok, stir-fry silver sprouts, ginger and spring onion shreds for 3 mins. Add fresh rice noodles and sauce, stirring all the time.
  7. When almost cooked, add in sliced beef and chive shoots, mix well. Dish and serve hot.
