4) Spring Onion Hot cake (4 nos.)

Ingredients:

60 g Spring Onion

1 level tsp salt (1/2 to dough, 1/2 to spring onion)

110 g plain flour

2 1/2- 3 tsp cooked oil/ lard

2 tbsp oil for shallow fat frying

Method:

1. Wash spring onion, remove roots and dry tips. Dice finely. Mix with 1/2 tap salt.

2. Sieve flour with 1/2 tsp salt into a mixing bowl. Make a well in the centre and add tsp cooked oil/ lard, 2-2 1/2 tbsp hot water. Mix to form a soft dough.

3. Knead the dough lightly on a floured board. Divide into 2 portions. Roll to an oblong of 15 cm X 20 cm.

4. Divide the pastry lengthwise into 2 long strips. Brush with lard and sprinkle chopped spring onion mixture along the centre of each strip. Fold strip in three to form a long roll.

5. Flatten each roll and then fold into two. Seal both ends of each roll.

6. Coil with the layer edge on the outside to form a cake. Place the sealed end underneath, and slightly flatten each cake.

7. Using 2 tbsp oil, shallow-fat fried cakes over gentle heat in a wok until both sides of the cakes are golden brown. Serve hot.
