5) Lucky Sparrow Nest

Ingredients:

1 green pepper

1 red chilli

100 g carrot

100 g cashew nut

(taro nest)

100 g taro

1/2 tsp salt

few shakes of pepper

(Garnish)

2 tomato

1/2 cucumber

Sauce:

60 ml white vinegar

1 tbsp tomato ketchup

1/4 tbsp OK sauce

2 tbsp sugar

1/4 tsp Worcestershire sauce (optional)

few drops of sesame oil

1 tsp cornflour

Method:

1. Wash and cut the vegetable into cube.

2. Boil cashew nut in water for 2 mins. Drain.

3. Cut into pattern pieces.

4. Grate taro into shreds. Season well.

5. Heat oil and strainer.

6. Line th strainer with taro shreds, deep dry until golden in colour.

7. Deep fry the cashew nut until golden brown.

8. Heat 1/2 tsp oil in wok, add the vegetable and stir-fry for 2 mins. Add the cashew nut & stir for 2 mins.

9. Add sauce and cook until thickened.

10. Serve the ingredients on the taro nest.
