6) Chicken in Soya Sauce

Ingredients:

1 no. (1kg) chicken

2 stalks spring onion

Soya sauce mixture:

100 ml dark soya sauce

50 ml light soya sauce

75 ml water

rock sugar 40 g

Method:

1. Wash and clean the internal cavity of the chicken. pat dry and leave to hang dry for 1/2 hour.

2. Scald the chicken with boiling water.

3. Mix dark soya sauce, water and light soya sauce together in a wok, bring the sauce to boil, stand the chicken and boil sauce after 10 mins, add rock sugar. keep pour sauce for approx. 25-30 mins. until cooked.

4. Cool the chicken.

5. Prepare spring onion flowers.

6. Cut the chicken into sections. Pour some of the sauce on top. Serve.
