8) Water chestnut Pudding

Ingredients:

140 g water chestnut flour

140 g water chestnuts

225 g granulated sugar

2 tsp cooked oil

750 ml water

Method:

1. Prepare water for steaming. Greeze the tin.

2. Wash, peel, crush & chop waterchestnuts into small pieces.

3. Mix waterchestnut flour with 350 ml cold water to form a smooth batter.

4. Boil the remaining 400 ml water with granulated sugar & chopped waterchestnuts added. Piur this into the batter.

5. Return the mixture to the pan & cook for 3-5 mins. Stirring all the time until mixctures thickens & turns a little transparent.

6. Remove from heat, add in 2 tsp cooked oil , mix well. Turn the mixture into greased tin & steam for 25 mins.

7. Cool and cut into slices.

8. Coat with beaten egg & shallow fry until golden brown. Serve hot.
