Recipe-- Cold Sweet

9) Lemon Sponge

Ingredients:

30 ml lemon juice

250 ml water

rind 2 lemons

4 level tsp gelatine

50 g sugar

2 egg whites

Method:

1. Dissolve the gelatine and sugar and infuse the lemon rind in the water over low jeat, leave this mixture covered for half and hour. Strain it and leave it till quite cold and beginning to thicken; to cool it quickly stand the basin ove ice.

2. Add the strained lemon juice and the whisked egg whites.

3. Whisk all together till quite stiff and turn it into a rinsed mould or into individual glasses, leave it to set.

4. Turn out and serve.
