Sertã Cakes (I) (Bolo da Sertã)
Shoping list:
- 500 grs of flour
- 1 soup spoon of baking powder
- 1 soup spoon of butter
- 1 soup spoon of lard
- 4 soup spoons of sugar
- 3 eggs (or more)
- milk
Mix all ingredients very well, adding one more egg or some milk until the
dough is smooth. Roll the dough 1 inch thick and cut it round shape.
Take to the oven, or grill or a Sertã
Sertã Cakes (II)
(Bolo da Sertã II)
Shoping list:
- 4 cups of corn flour
- 1 cup of wheat flour
- 3 cups of milk
- 3 cups of water
- 6 soup spoons of sugar
- 1 soup spoon of butter
Bring to boil the milk, the water, the sugar and the butter, add the corn
flour stirring constantly until it seems cooked. Take it from the stove and
stir in the wheat flour. Let it cool and knead for a little while.
Make little cakes with the dough, let it stand for a few minutes on a floured
cloth and cook in the oven or on a grill.
Sweet Bread I (Massa sovada I)
Shoping list:
- 10 cups of flour
- 2 1/4 cups of sugar
- 9 eggs
- 1/2 tbsp of shortening
- 1 cup warm milk
- 2 1/2 packs of active dry yeast
- pinch of salt
Dissolve the yeast in 1/2 cup of warm water and 1/2 tsp of sugar. Wait
until it doubles the volume. Beat eggs until fluffy, add the yeast and some
of the flour until it makes a batter.. Cover with a cloth and blanket
keeping warm in a big bowl until it bubbles. Add the melted butters sugar,
milk and salt. A little glass of aguardente wil be good also. Add the rest
of the flour. Mix well kneading several times. Cover warm and wait until it
doubles.
Shape in round cakes and place in cake pans and take into the oven
until is golden brown.
Sweet Bread II (Massa sovada II)
Shoping list:
- 4 kgs of flour
- 1, 250 grs. of sugar
- 15 eggs
- 500 grs. butter or margerine or half of each
- 2 cups warm milk
- 70 grs of active dry yeast
- pinch of salt
- 4 tbsp of lard
Place in a pan the butters, milk, salt. Mix in a bowl the yeast with a
little of cold water and add to the flour, sugar and eggs. Add all the
other ingredients mixing very well. If too stiff add some warm milk.
Sparkle some flour over the dough when is smooth, cover with a cloth and
blanket and let it grow ( It may take a couple of hours). Grease and flour
some cake forms fill with the dough half the size e leave in there for 4
hours. With a greased scisors cut a + shape on top, with two eggs beaten
spread over the dough and take to the oven. 45 minutes.
