Recipe for Ginger Beer

Ingredients:
- 1/2 lb green ginger
- 1 gallon water
- 1 large green lime
- 2 pounds granulated sugar
Procedure:
- Scrape ginger, wash and pound it.
- Put it in a large bowl and pour boiling water over.
- Stir in the sugar until dissolved.
- Peel the lime and add both lime and rind to the liquid.
- Cool and pour in a glass or earthenware jar.
- Cover and let it stand for 6 days, stirring with a wooden spoon every
other day.
- When ripe, strain, pour off into bottles which may be placed in the
refrigerator to chill.
- Bottles may be kept at room temperature and allowed to ripen for a
further 2 or 3 days before using.
Recipe for Ginger Beer
Ingredients:
- 1 gallon water
- 1 1/2 pounds sugar
- 1/4 oz. cream of tartar
- 1 oz green ginger
- 1/2 lemon
- 1 oz. dry yeast
Procedure:
- Bruise the ginger, put in the water, add the sugar and boil for 1 hour.
- Skim and pour on to the sliced lemon and cream of tartar.
- When almost cold, add the yeast.
- After 2 days strain and bottle. Use in a day or two.
