Drahana (Tirhana in Arabic) is a Middle Eastern food made from wheat
dried with milk and yoghurt. Haloumi is a Mediterranean white cheese. Both
can be bought from Arabic, Greek or Turkish grocers.
Ingredients
4 - 6 oz Drahana
2 pints chicken or lamb stock
2 - 4 oz tin Haloumi cheese cut into 1 cm cubes
salt and pepper to taste
Method
Soak the dry hard Drahana overnight.
Make the stock equivalent to 2 pints or use a stock cube and make
upto the required amount.
Put the stock into a large 3 pint saucepan and add the drained
Drahana, cut Haloumi, salt and pepper. Stir gently until boiling.
Reduce the gas and continue to stir occasionally until the mixture
has thickened.
