Soup Drahana Soup


Description

Drahana (Tirhana in Arabic) is a Middle Eastern food made from wheat dried with milk and yoghurt. Haloumi is a Mediterranean white cheese. Both can be bought from Arabic, Greek or Turkish grocers.

Ingredients

Method

  1. Soak the dry hard Drahana overnight.
  2. Make the stock equivalent to 2 pints or use a stock cube and make upto the required amount.
  3. Put the stock into a large 3 pint saucepan and add the drained Drahana, cut Haloumi, salt and pepper. Stir gently until boiling. Reduce the gas and continue to stir occasionally until the mixture has thickened.
  4. Serve with lemon juice.
