Tortuga Pepper Jelly
Cooked up from green and red peppers, this spicy jelly is the ultimate cream cheese & bagel topper, or serve it with cream cheese and crackers as an hors d'ouevres.

Mustard and Mango Chutney from Cheryl's Taste of Paradise.  Slightly zippy mustard is pretty terrific with most anything from sandwiches to sauces.  Serve the mango chutney as a complement  to pork, chicken or seafood.

Those bees in the Cayman Islands must be busy as a....well, never mind.  Anyway, they're cranking out some seriously wonderful honey - 2 varieties.  One, gathered from Caribbean wildflowers, is bottled with the comb.  16 oz., $9.00. 

The other comes from lime blossoms and is delightfully different.  18oz., $9,00.

Our newest cookbook . . . . A Taste of the Caribbean by St. Thomas' own Angela Spenceley.  It's delicious, delectable and downright devilish.  282 pages of recipes for soups, salads, appetizers, entrees, veggies, desserts, seasonings, sauce and chutneys, and tropical drinks. It's interspersed throughout with island sayings, lore, legend and fact.  $20.00.    Here's an excerpt:
 
HOT MANGO CHILI KETCHUP
  • 1 tsp. cumin
  • 1 tsp. turmeric
  • 1/4 C. olive oil
  • 1 large onion, minced
  • 2 cloves garlic, minced
  • 6 hot chili peppers, seeded and minced
  • 1 C. malt vinegar
  • 1/3 C. granulated white sugar
  • 2 C. mango, diced
  • 1 tsp. salt
In a dry sauce pan, toast the cumin and turmeric until fragrant, about 2 - 3 minutes.  In the same pan, add the oil and saute the onion, garlic and peppers until onions are just soft.  Add vinegar, sugar, mango and salt, simmering for 15 minutes.  Remove from heat and cool.  Pour into a blender or food processor and puree until smooth.  Place into sterilized jar and refrigerate.  Use within four weeks.  (Jeannie's note:  adjust heat by adjusting amount of hot peppers)  Makes approximately 3 cups of bone-tingling ketchup to put on ANYTHING.
