On January 24, 2000 we traveled to St. Lucia located in the West Indies south of the Virgin Islands. We had such a wonderful time that we decided we'd design a web site to let others know about this beautiful island. Fillets of Trout in Wine Sauce with Plantain INGREDIENTS 4 Trout fillets 2 tsp honey spice seasoning for dusting 3 tbsp chopped fresh parsley 2 tbsp of butter 1 yellow plantain 1-2 garlic cloves oil, for frying 2/3 cup of fish stock salt and freshly ground black pepper Serves 4 1. Season trout fillets with spice seasoning and marinate for 1 hour 2. Melt the butter in a large frying pan and heat gently for 1 minute. Add the trout fillets and saute for 5 minutes, or until cooked through, turning carefully once. Tranfer the fillets to a plate and keep warm. 3. Add the garlic, wine, fish stock, and honey to the sauce pan, bring to the boil and simmer to reduce the liquid slightly. Return the trout fillets to the pan and spoon over the sauce. Sprinkle with parsley and simmer gently for a few minutes. 4. Meanwhile, peel the plantain and cut it into rounds. Heat a little oil in the frying pan and fry the plantain slices for a few minutes, until golden brown, turning once only. Transfer the trout fillets warmed serving plates. Stir the sauce, adjust the seasoning and pour over the fish. Serve with the fried plantain. |
