4-5 boneless/skinless chicken breasts
2 Cups frozen broccoli
1 can cream of mushroom soup
1 Cup mayo or miracle whip (you can use non-fat)
1 14oz can evaporated milk (you can use non fat here, too
1 Cup cheddar cheese
1 can/large Durkee's French Fried Onions
3 cups cooked white rice
Boil your chicken thoroughly. Preheat oven to 350 degrees. In a large oven safe bowl combine the soup, mayo, evaporated milk and cheese stirring well. Add the broccoli. Once the chicken is cooked cut it into bite sized pieces and add it to the bowl as well. Stir again and place in oven uncovered. It will cook for about 45 minutes to an hour, sometimes longer, once the liquid starts to solidify a little add the onions and bake for another minute until golden brown. Remove from oven and allow to "set" for 10 minutes and serve over hot rice.
