The following is the recipe for making pizza on the grill. While we made this on a propane grill on the boat, it can also be made on a gas grill at home. I can't take credit for this recipe, it was originally submitted by the Thompson family to Cruising World several years ago.
Dough:
1 package dry yeast
Pinch of sugar
1 cup warm water
1 teaspoon olive oil
2 teaspoons salt
1/4 cup cornmeal
3 to 3-1/2 cups flour
Dissolve yeast and sugar in warm water, let stand 5 minutes. Stir in oil, salt, and cornmeal and gradually add flour to form stiff dough. Knead for several minutes (in the bowl). Cover bowl with towel and let rest for 20 to 30 minutes (use this time to prepare toppings).
Punch dough down lightly and divide into 4 pieces. Oil the back of a baking sheet and shape pizzas on oiled surface (press hard with fingertips; use more flour as needed). With a spatula, slide shaped dough onto preheated grill, one at a time. When browned on one side (5-7 mins), remove and place toppings on grilled side. Return uncooked side down to grill and cook 3-5 mins to melt toppings. Serve as individual pizzas, or cut into wedges and share.
