1-2/3 cups all-purpose flour
3/4 cup sugar
1 tablespoon poppy seeds
1 teaspoon baking soda
3 tablespoons fresh lemon juice
3/4 cup skim milk
3 tablespoons margarine, melted
1 teaspoon grated lemon rind
2 egg whites, beaten Baking spray with flour
Combine flour, sugar, poppy seeds, baking soda and milk in a large bowl, and stir well; make a well in center of mixture. combine milk, lemon juice, margarine and lemon rind in a bowl; add to dry ingredients. Stir just until dry ingredients are moistened.
Spoon batter into an 8-inch square baking pan coated with baking spray. Bake at 375 for 28 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack.
