Muffins, Plain or Blueberry

 

(Prehear oven to 400F)

1 and 1/2 cup all-purpose flour

2 and 1/2 teaspoons double-acting baking powder

1/2 teaspoon salt

1/4 cup sugar

1/4 cup butter

(Yield: 12 medium, 2 and 5/8" diameter)

3 tablespoons honey

1/4 cup milk

1 large egg, beaten

1/2 cup of blueberries or huckleberries

 

Grease the muffin tin or tins.

Sift and combine the flour, baking powder, salt, and sugar.

Serve with honey butter or plain butter.

Over low heat melt the butter and the honey. Stir together.

Remove from the heat and add the milk. Beat in the egg.

Combine the two mixtures, stirring only until moistened.

Stir in the blueberries.

Fill the muffin tins half full and bake for 20 minutes or until a toothpick stuck in the center of a muffin comes out clean.

Eat with fresh butter. 1
