Chicken Adobo 6-7 drumsticks or thighs 3 cloves of garlic 1/3 cup of vinegar 1/2 cup of soy sauce 1 cup of water 1 onion, Chopped 1/2 tsp of salt 1/2 tsp of pepper Mix everything into a pot, bring to a boil for 5 minutes. After 5 minutes, stir lightly, then cover the pot and simmer on medium for about 20-30 minutes. Serve over rice. |
Chicken/Pork Afritada 1 lb of chopped pork butt or meat or chicken thighs 1-2 chopped onions 1-2 chopped tomatoes 1-2 chopped red potatoes (or any kind) 3-4 crushed cloves of garlic 1-2 bay leaves 1 6-8oz can of tomato sauce 1 cup of water 1/2 tsp salt 1/8 tsp pepper Mix everything in a large pot. Bring to a boil and simmer for 30-40 minutes. Serve over rice. |
Oxtail Soup 5-6 Pieces of chopped oxtail 1-2 Bunches of rinsed Watercress Boil oxtail in a pot of water for 1-2 hrs. Add watercress after 1hr. Add Salt and Pepper to season. |
Pancit/Rice Noodles 1/2 lb chopped chicken meat or pork meat Butter or Oil 1/2 Cup of chicken broth 2 cloves of chopped garlic 2 chopped onions 2 chopped celery stalks 2 Chopped carrots 1 package of rice vermicelli 1/2 cup of fish sauce 3 tsp of soy sauce Boil and drain the rice noodles. In a wok, add oil, garlic, and onions. Stir fry for 2 minutes and then add the pork, soy sauce and fish sauce. Cook until the pork is done, then add celery and carrots, and chicken broth. Bring to a boil and simmer until carrots and celery are done. There should still be some broth sitting in the wok - add the rice noodles and toss in the wok until the broth is absorved by the noodles. You can eat it like this or add some red wine vinegar at the table (which is what I LOOOOVE). |
