Braised and Roast Pig Head

The Ingredient:

Pig head

cooking wine

soy sauce

vinegar

rock candy

scallion

ginger

cassia bark

Aniseed

fennel seed

rape hearts

 

The Recipe:

1. Cut open the scraped and washed pig head in the ack,remove the brains and bones, soak it in clear water for tow hours, boil it for twenty minutes, dig out the eyes, cut off the ears, cheeks, snout, lymphatic meat, scrape off the tongue, membrane and boil it in clear water over a roaring fire for about 20 minutes twice. Tie up the spices in guaze.

2. Put a bamboo mat on the bottom of a pot, cover it with the ginger, scallion, pig head, rock, candy, soy, sauce, cooking, wine, vinegar, spices, pour clear water into it , cover the pot,bring it to the boil over a roaring fire then simmer the stew over a slow fire for about two hours till the gravy gets thick and the meat is well-done.

3. When dishing up the tongue,head meat,cheeks, ears and eyes, put them where they should be to form a pig head,pour the gravy on it and garnish it with the rape hearts.
