FF7 vs FF8: Coming with FF8 are a few differences from its other PS counterpart as well as the other Fantasies. First of all the characters in FFVIII are properly proportioned models to replace the smaller, more anime-look of FFVII. This will make the characters look more realistic as well as make the FMV to game more fluid and convincing. "Sakaguchi explained that he wants to persue a more in-depth and detailed story line for FFVIII, and he's seeking a more effective graphical expression for the storytelling. He added that he hasn't forgotten about the interactive elements that make it a video game, though. He also mentioned that Square's overseas offices (namely Square USA) are contributing to the technical aspects of FFVIII, namely the game's CG and development tools. Secondly, the characters will also be fully texture-mapped. This, along with the forementioned difference will help make the in-game characters look more like their FMV counterparts. One of the most interesting differences, in my opinion, is that this time, all of the characters will be shown simultaneously, instead of only showing one character, and then all of a sudden the other characters jump out of him and start to talk or do whatever. As for Chocobos, they of course will be returning in FF8. This time, they are being made to be more realistic, though. I have also recently heard that Wedge AND Biggs will also be in Final Fantasy 8 after some debating.
