And for the one looking for a kiki am recipe, I got it! I'm not Chinese though. I'm the Spanish Filipino kind.
Filling:
1/2 kilo ground baboy; 1/2 cup each chopped bacon and ham; 1/2 cup each thinly sliced carrots and singkamas; 1 tbsp. each chopped garlic, brown azucar, five-spice powder and chopped spring onions; 2 tbsp. each all-purp. flour and soy sauce; 2 eggs; salt and pepper; taupe or kekiam wrapper; cornstarch dispersed in water and oil for frying
Sauce:
1 cup water or broth; 2 tbsp. each cornstarch dispersed in water, sugar and soy sauce (again!); 1 tbsp. catsup and 3 pieces finely chopped chili pepper
Action!:
Combine all ingredients for the filling except the cornstarch and wrapper (of course!). Trim the edges of taupe wrapper then cut into desired sizes. Brush surface with dispersed starch. Place 2 tbsp. filling then roll into thin cylinders. Steam for ab ut half an hour. Cool then brush lightly with oil. Deep-fry until golden brown. Let cool. Slice diagonally into desired thickness.
Prepare Sauce:
Mix water, soy sauce, catsup and chili pepper. Let boil. Add cornstarch mixture and cook until thick. Season to taste.

I got no idea what the hell "kikiam" is. Is that Pampangueño, Cebuano or Ilokano food? Try this quintessential fish recipe called "Sinigang na Hito de Cocina Ipis"

Ingredients:
1 large red onions, sliced
6 tbsp. canola oil
2 each, red and green small seedless peppers
3 long green chilis
1 peeled and sliced radish
5 artichoke hearts
2 lbs. or more? hito
1½ tbsp. Iodized patis
½ liter each, fish stock and rice washings
3 tbsp. calamansi
salt and pepper to taste

Cooking Procedure:
Saute red onions in canola oil. Add peppers, chilis, radish, artichoke me and hito. Simmer until hito is tender. Add patis, fish stock, rice washings and calamansi juice. Season with salt and peppah.

Serve hot. Yum!

I was looking for "Kikiam" recipe via altavista.com Your site was listed plus other Filipino websites with foul language. Yours is enjoyable! As a matter-of-fact, I printed the whole shebang. I do agree with someone down there re comments re graphics, po sibly frames, etc. Also, someone made a comment about "Utang na loob," and I must say that if you intend to add this, be careful; do this in a positive way. The negative connotation is "being indebted" for the rest of one's life thereby pulling down the p rson when he/she succeeds. That, according to Father Gorospe from Ateneo De Manila (years ago) said about what's wrong with Filipino mentality. More power to you. Now, do you have "Kikiam" recipe? Why not post it on "Recipe Depot" at CuisinePlus. Anybody? ? Thanks!

Nicely done!!! To tell you frankly, I was thinking of coming up with a list like this myself but I guess you beat me to the draw. But I doubt if I would've done a better job. One suggestion, though: why not remove the things in the list not distinctly filipino (i.e. Jeans)and giving accomplished filipinos more prominence (I think Efren Bata, Paeng Nepomuceno and Lea Salonga should get individual entries).
