(Ambrose Bierce, The Devil's Dictionary) In my former life as a housewife, I was presented with a very challenging situation. My former husband, Cliff, was diagnosed as suffering from pancreatitis, an inflammation of the pancreas usually caused by drinking too much alcohol (in 70 to 80 percent of adult patients) or by gallstones. He didn't have gallstones. A person who suffers from pancreatitis who continues to drink alcohol and/or eat an unhealthy diet runs the risk of developing diabetes and/or pancreatic cancer (which can only be cured if it is found at a very early stage, before it has started to spread). He has since developed diabetes. Because I'm such a nice person, I decided to try to save his life. First, I packed up all the the liquor in the house and gave my friend an early Christmas present. Since he said he wasn't an alcoholic, I poured any bottles I happened to find over the next few years down the kitchen drain. I'm sure he didn't mind since he wasn't an alcoholic. Why are you reading this on the introduction to the "Kitchen" section of my website? Well, part of the treatment for the pancreatitis included changing his diet to lower his fat intake. I began to read everything I could on low-fat cooking. I scoured bookstores, the library, and the internet for all the information I could find. I amassed a collection of cookbooks and recipes and learned how to lower the fat content of just about any recipe. I was able to monitor the food he ate at home and I tried my best to educate him on how to eat when he dined away from home. He tipped the scales at about 280 lbs when he first became ill. He lost 25 pounds. I lost 40.
