Ingredients:
6 skinless, boneless chicken breast halves
2 tbl fresh lime juice
1 garlic clove, minced
1/2 tsp salt
1/8 tsp pepper
1 tsp chili powder
2 tbl olive oil
Procedure:
Rinse chicken with cold water and pat dry Using mallet or the flat
side of a cleaver, pound breasts until they are flattened to an
even thickness (it may help to think of someone you're having trouble
with while doing this -- my family says I look dangerous during this part
and seem to enjoy it way too much...).
Put remaining ingredients ingredients in a zip-lock bag and mix well.
Add chicken and marinate 2 hours at room temperature or up to 24
hours refrigerated.
Prepare grill. Set an oiled rack over hot coals and grill chicken,
turning once, until browned outside and just cooked through, about 4-5
minutes per side. Let cool to room temperature, then slice into
long strips. May be used as filling for fajitas.
