CORN
PUDDING
YIELD: 6 SERVINGS
1 cup cooked corn kernals-can drained
3 eggs, well beaten
1/4 teaspoon salt
1/4 teaspoon brown sugar
Dash freshly ground black pepper
3/4 cup milk
1/2 cup heavy cream
1 tablespoon melted butter
Preheat oven to 325°F.
In a large bowl. mix all ingredients and place in a buttered 1 1/2-quart
casserole dish. Bake for 45 minutes to an hour (or until pudding sets).
Serve warm.
