CREAM
OF ZUCCHINI AND ALMOND SOUP
Serves 6
I
onion, minced
3 tablespoons butter
3 zucchini, peeled and thinly sliced
1/2 cup slivered almonds
4 cups chicken broth
1/2 cup ground blanebed almonds
3/4 cup heavy cream
I tablespoon amaretto
1/4 teaspoon cinnamon
1/2 teaspoon freshly grated nutmeg
Saute'onion and butter
until soft Add zucchini and slivered almonds and cookfor about 5 minutes
until zucchini is tender crisp. Add chicken broth and simmer until liquid
is reduced ~ one~third (about 25 minutes). Add ground almond and simmer
10 more minutes. Over logo heat, stir in cream, brown sugar, amaretto,
cinnamon and nutme& Garnish with zucchini zest or toasted almonds,
if desired.
