KILLER CHILI BEANS
2 1/4 CUPS Pinto Beans (soaked overnight)
3 Serrano Chiles
1/3 Medium Brown Onion
3 cloves Garlic crushed and cut up small
1 Tablespoon Oregano
1 Tablespoon Whole Cumin Seed
1 19 0z can Medium Las Palmas Enchilada Sauce
Water to cover by 1/2 inch
1 cube vegetable bouillon or a packet of flavoring from a Ramen Noodle Pack.
Chop onion and Serrano Chili medium fine.. 1/4 inch dice.
Place in Crock pot, add Beans and other seasonings.
Pour in Enchilada Sauce and water.
Set Crock pot on High for 6 hours or longer,
stir once or twice during last half hour or hour of cooking.
Optional, add meat, and cut into small dice or grind up, and add at beginning.
I make this dish a lot. It also makes great burritos with cheddar cheese. Great also with crackers!
This is simply a wonderful and easy dish to prepare!!!
