Fettuccine Alfredo
4 Servings
3 tbsp butter or margarine
1/3 cup minced shallots
1 ¼ cups heavy cream
1 cup light cream
½ tsp salt
Pinch nutmeg
¾ cup grated Parmesan cheese
1 pound fettuccine, cooked and drained

1.) Melt the butter or margarine in a medium-size saucepan over medium heat. Add the shallots and saute until soft, 3-4 minutes.
2.) Stir in the creams and spices and bring to a boil over high heat, stirring constantly.
3.) Reduce the heat and simmer uncovered until the sauce thickens, 4-5 minutes.
4.) Stir in the Parmesan cheese. Pour the sauce over the fettuccine and toss well.
