APPLE & BLACKBERRY CRUMBLE

INGREDIENTS
650g apples, peeled, cored and sliced
250g frozen blackberries
140g caster sugar
1 tablespn grated lemon rind
1 tblespn lemon juice
75g butter
100g flour
25g flaked almonds

Heat oven to 180C

METHOD

Place apples and blackberries in an ovenproof dish, sprinkle with 60g of the caster sugar, the lemon rind and juice.
Rub butter into flour until mixture resembles fine bread crumbs, then stir in remaining sugar and flaked almonds. Spread crumble mixture thickly over the fruit and bake in 180C oven for 35 to 40 minutes, or until top is slightly golden. (For a darker crust, place under a hot griller for a further 5 minutes.)
To Serve: Serve hot, with cream.
Serves 6 - 8.
