My Favorite Tea Recipes

Vanilla Milk Tea
1 cup milk
1 2-inch piece of vanilla bean, split (or 2 tsp. vanilla extract)
4 teaspoons English Breakfast tea
1 quart boiling water

Pour the milk in a small saucepan, add the vanilla bean, and bring to a simmer. stirring often. Remove the pan from the heat and let it stand until the milk is cool. Remove the bean.
Warm a teapot and teacups with hot water. Drain and dry them.
Put the tea leaves in the teapot and add the boiling water. Cover with a tea towel or cozy, and steep for 5 minutes.
Pour about 1/4 cup of the cooled milk into the teacups.
Stir and strain the tea into the hot cups. Serve right away.

Tuna Salad Sandwiches

Mix your favorite tuna with mayonnaise and chopped up sweet pickle or relish. For each sandwich spread a little mayo on two slices of bread. Spread the tuna salad evenly between slices.
Cut crust off sandwiches and then cut into squares, triangles or other fun shapes using cookie cutters.

Hint: Tea sandwiches are easier to cut when they are chilled first, so wrap sandwiches in a slightly damp tea (kitchen) towel and then in wax paper and place in refrigerator for at least 20 minutes

Cinnamon Bears

Using store bought sugar cookie dough  roll dough to 1/8 inch thick. Use bear shaped cookie cutters or gingerbread boy cutter and use small dough balls for bear ears. Bake according to package or recipe directions and immediately sprinkle with cinnamon sugar after removing from oven.

Petit Fours (prefect for a teddy bear or fairy tea)

Pound cake cut into 1 inch slices
1/2 cup seedless strawberry jam
2 cups powdered sugar
6 tablespoons of water
Food coloring

Trim the crust from each slice and cut into 4 squares (or cut with mini cookie cutters)
Put a layer of jam between 2 squares

To make icing, add the water (stirring between each spoonful) to the powdered sugar
Add a few drops of food coloring and /or flavoring (we use yellow food coloring with lemon extract and red food coloring with cherry extract)

Place cakes on wire rack set over a pan
Pour icing over cakes. Let dry.
Once dry you can decorate with gel or edible flowers
