Italian Noodle Salad
1 box spiral pasta noodles, cooked, drained, cooled.
1/2 medium white onion, finely chopped
2 tablespoons grated parmesan cheese
1/2 cup Italian dressing
1/2 cup finely grated cheddar cheese
1/2 cup chopped black olives
salt, pepper
Mix dressing with cooked, drained, noodles before cooling so noodles don't stick together. Put in fridge for about 1/2 an hour. Mix all other ingredients in with cooled noodles. All ingredients can be adjusted to taste.
Penne with Sage and Garlic
1 pound uncooked Penne pasta
1 stick of butter
2 cloves minced garlic
1 1/2 teaspoons dried sage
1/4 cup flour
1 1/2 cups milk
3/4 cup grated Parmesan cheese
Cook pasta, drain. Melt butter in saucepan over low heat. Add garlic and sage. Stir to mix and heat 5 minutes. Add flour and stir, cooking 2 minutes. Add milk gradually, and stir 5 minutes. Remove from heat, mix in cheese. Toss with cooked pasta.
serves 4
Red Beans and Rice
2 cups cooked kidney beans or canned and drained
3 scallions thinly sliced
2 cloves garlic, minced
1/2 onion, chopped
2 bay leaves
1/8 teaspoon red pepper flakes
salt and pepper to taste
1 cup vegetable broth or water
1/2 cup tomato sauce
2 cups cooked rice
Mix everything, except rice in a large pot. Cook uncovered over low heat for 60 minutes. Add rice and cook for 30 minutes longer until sauce is thick and beans are very tender.
serves 4, easily doubled
