California Club Fruit Plate

Betty Crocker's Dinner for Two Cook Book, p. 63. 1958.

Serves 2 in your favorite Plaid Luncheon Plates.

Ingredients
  • Watercress
  • Melon balls
  • Seedless grapes
  • Light and dark bread
  • Butter
  • Sweet French Dressing
  • Orange slices
  • Avocados

Crabmeat Salad

  • 1/2 cup flaked cooked crabmeat
  • 1/2 tsp. lemon juice
  • 1/2 tsp. minced onion
  • salt and paprika to taste
  • 1/2 cup diced celery
  • 1/2 cup lettuce hearts in small pieces
  • Mayonnaise

Walnut-Cheese Bonbons

  • Cream cheese
  • Cream
  • Walnut halves

Instructions

Crabmeat Salad
Mix all ingredients lightly in order. Chill thoroughly. Just before serving,drain and toss together with mayonnaise to moisten. Serve on avocado half.

Walnut-Cheese Bonbons
Soften the cream cheese with cream. Shape into balls, using 1 level tsp. for each. Place between walnut halves.

Putting it all together
For a beautiful arrangement center each plate with an avocado half on lettuce. Fill with Crabmeat Salad.

At back of plate, on watercress, place mound of melon balls and seedless green grapes between finger sandwiches of lightly buttered dark and light bread. If desired, drip a little French dressing over the fruit.

At front of plate, arrange half circle of orange slices topped with Walnut-Cheese Bonbons.
