Peach 'N Prune
Upside Down Cake

Peace 'N Prune Upside Down CakeFamily Circle, Sugaripe Fruit Ad. p. 77. November 1953.

Makes 1 Sheet Cake. Serve this one in a
14" chop plate.

Ingredients
  • 1/4 butter
  • 1/2 cup brown sugar (packed)
  • 8 cooked dried peaches
  • 16 cooked dried prunes
  • 1 1/2 cup sifted cake flour
  • 1 cup granulated sugar
  • 2 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 1/3 cup shortening
  • 1/2 cup milk
  • 1 egg
  • 1 tsp. vanilla extract

Instructions

Melt butter in bottom of 9" square pan. Combine with brown sugar and 3 Tbs. prune juice.

Arrange peaches and pitted prunes in mixture. Sift together flour, sugar, baking powder and salt. Add shortening and about half of the milk. Beat 2 minutes (200 strokes). Add remaining milk, unbeaten egg and vanilla and beat 2 minutes longer.

Turn batter carefully over fruit in pan. Bake in moderate oven (350 degrees) about 1 hour. Let stand 10 minutes. Invert over serving plate. Serve warm.
