Melt butter in bottom of 9"
square pan. Combine with brown sugar and 3 Tbs. prune juice. Arrange
peaches and pitted prunes in mixture. Sift together flour, sugar, baking powder and salt.
Add shortening and about half of the milk. Beat 2 minutes (200 strokes). Add remaining
milk, unbeaten egg and vanilla and beat 2 minutes longer.
Turn batter carefully over fruit in pan. Bake in moderate oven (350 degrees)
about 1 hour. Let stand 10 minutes. Invert over serving plate. Serve warm. |
