REAL BAKED MAC & CHEESE

- Preheat oven to 350.

- 2 1/2 c. macaroni noodles
- 2 T. margarine
- 1 1/2 T. flour
- 2 c. skim milk
- salt and pepper
- 1 1/2 c. sharp or extra sharp cheddar cheese

- Cook the macaroni according to package instructions but don't overcook.

- Melt margarine. Add flour, salt and pepper. Stir with a wire whisk.
Add milk and whisk over low heat until mixture thickens. Cut cheese into
1 inch cubes and heat with the thickened mixture until all the cheese melts.
In a casserole dish, pour cheese over drained noodles.

- Bake 20-30 minutes until nice and brown. Can be done in the microwave
for 5-7 minutes for a much less desirable but fast dish.

- Makes 3-4 dozen. Preheat oven to 350

- 3 c. rolled oats
- l 1/2 c. flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 c. butter
- 1 c. brown sugar, firmly packed
- 1/2 c. sugar
- 2 eggs
- 1 tsp. vanilla
- 1 c. dried cranberries

- 1. Sift together flour, baking soda, cinnamon, and salt. Set aside.

- 2. Beat butter and sugars with hand-held or standing mixer until creamy.
Add eggs and vanilla, stirring until thoroughly combined,
- scraping the sides of the bowl a fewtimes.

- 3. Add flour mixture to creamed mixture and mix well.
- Fold in oats and cranberries.

- 4. Drop rounded tablespoonfuls onto an ungreased cookie sheet.
- Bake l0 to 14minutes, until golden brown.
