Since you like Taco Dips, here is another one, this one is
called WALKING TACO SALAD/DIP. This one is as good as the
other Taco Dip recipe I gave you. You need: 1 can of refried beans,
1 16oz. tub of sour cream, longhorn cheese,1 can of chopped ripe black olives,
1/2 package taco seasoning, onion, taco sauce, and tomatoes.
Stir together refried beans and taco seasoning, and spread in
a 9x13 pan. Top with sour cream, onion, and olives. Top with taco sauce
and shredded longhorn cheese. Top that layer off with tomatoes.
Serve this with tortilla chips.

Here's a couple of variation on Toni's Tortilla Roll-Ups.
The recipe for these "Party Pinwheels" is easy enough even for me!
You should prepare them at least a day ahead or a minimum of 2 hours.
Ingredients:
One package softened cream cheese for each "flavor" of pinwheel,
3-4 tortillas for each variation (I use 3)
Variation 1
1/2-1 cup chopped stuffed olives chopped, (cream cheese)
Variation 2
1/2-1 cup chopped dill pickles, 1 Tblsp. or so Dijon mustard, 1 package of thinly sliced ham or other similiar meat, (cream cheese)
Variation 3
1/2-1 cup finely chopped celery, 1/4-1/2 cup hickory flavored barbeque sauce, 1 package thinly sliced roast beef, (cream cheese)
Mix each recipe separately in either food processor or regular mixer. Spead mixture on a tortilla and roll up tightly and wrap in waxed paper in the refrigerator or freezer. If you are using the freezer, thaw for 10 minutes before slicing. Slice into 1/2 inch pieces. I use my electric knife to slice. Also learned that the stuffing moves forward as you roll it so you don't need so much on one edge!! Enjoy.

Another thing that is tasty is....you take about four slices
of the dried beef (Buddig, for example) and lay them out
flat, overlapping each other, but not right square on top of
each other....then carefully spread the dried beef with
softened cream cheese...then on one end of the meat slices,
place either a row of olives, or a couple of sweet pickles,
or a dill pickle...then roll the whole thing up (the cream
cheese seals it together)...then put about four toothpicks
into the roll you have created...then slice into four pieces
and chill for about an hour or more. Very tasty. I usually
make a variety...sometimes even using the cocktail onions
instead of the olives or pickles.

Tina, here's another recipe for Tacos.
Surprise Spread:
1 8oz pkg cream cheese
1/2 C sour cream
1/4 C miracle whipe
2 cans broken shrimp
1 C Seafood Cocktail Sauce
2 C shredded mozzarella cheese
1 green pepper
3 green onions
1 firm tomato
Mix first three ingredients well. Spread on bottom of plate. Layer mozza cheese, then shrimp, then cocktail sauce. Top with green pepper, onion, and tomato (all well chopped). Top with mozza cheese.
Serve with taco chips or Breton crackers.
Yummy!

Here is my favorite recipe for a TACO DIP. You need one
eight ounce tub of sour cream, one large package of cream cheese,
and one package taco mix. Mix together all the ingrediants,
and spread on a flat plate. Garnish with tomatoes, onions,
peppers, and shredded cheddar cheese. Serve with tostito's
or doritos. It is a very good dip. I make it every time I
have friends over.

There's always the good ole sausage cheese dip. Fry up some spicy breakfast sausage (Jimmy Dean), one of the small tubes. Be sure to drain it real good. In another pan melt 1 tablespoon of margarine and then add the large pkg of Velvetta cheese. You might want to gradually add the cheese so it'll melt easier. Once the cheese is melted add the sausage. Last touch is a can of Rotelle diced tomatoes. The dip goes great with plain Dorito chips or even veggies.

My all time easy favorite is melted brie biscuit. Take a round brie and wrap it in pillsbury cresent dough and bake at 350 for ...? I forgot... but whatever the pastry directions say should be just right. You can make it pretty too by using some of the extra dough to make cookie cutter shapes like leaves and attach on top of the round brie pastry and brush with egg to give it a glazed look. Serve with crackers. MMMMMMM-mmmmmm-good!

I'm sitting here munching Ritz crackers even as I post on this topic!
I've had to do a lot of parties --- some catered, some not --- so I can speak from experience.
The spinach dip is a very good idea. Take a round loaf of bread --- sometimes called a "peasant loaf" --- and cut about 2 inches horizontally off the top. Hollow out the dough from the bottom part and pour in the spinach dip. Get those midget carrots and/or make celery sticks. Just make sure everything is dip sticks (snicker) are really short. I hate when guest double dip, after they've already taken a bite. That's really inconsiderate.
I have one of those electric press things, looks like a cookie press, with different shaped tips. This is really good for fillings for celery sticks and canapes. You could probably achieve the same effect with either a real cookie press or a pastry bag. I usually make fillings out of cream cheese and canned salmon, potted meat, crab or shrimp. Just chop whatever it is fine enough to fit through the tip.
Also, those giant flat middle-eastern breads, like pita bread but bigger, make pretty good hors d'oeuvres. Spread mayonaise, lettucce and a nice ham on the bread. Roll and slice into little sandwiches. Instant hors d'oeuvres! Heat and serve.
Price Club/Costco and those places shouldn't be underestimated. Consider getting a big bag of those frozen miniature quiches or swedish meatballs.

Cheesy Muffins are the best! Take a jar of Kraft Old English Cheese and mix it with a cube of butter. Spread on English muffins, cut into fourths, and sprinkle with cooked bacon. Broil in the oven until the cheese is browned a little. No fat in these puppies, no siree!

This is an oldie but a goodie.Take bacon strips and cut in half. Wrap one around a whole water chestnut and secure with a toothpick. Brush a little teriaki sauce on each.Bake in the oven about 15 to 20 minutes turning halfway through. Serve warm.

Hi! Hope you have a fun party! My favorite is real easy and
I swear everyone will "ooh & ahhh". It is Artichoke dip that you
serve with small rounds of french bread or crackers.
Here goes:
1 6oz. wedge (or pre-grated)of fresh parm. cheese
1 cup mayonnaise
1 jar (14-16 oz) of marinated artichoke hearts
Fresh garlic
Mix it all together, Bake at 350 degrees 10-15 min till hot and cheese is melted. Serve warm.
I tell you, it is delicious!!!!

Tortilla roll-ups.....they are so easy! You need flour round tortillas, for the filling you combine cream cheese (usually 2 pkgs) and green onions-chopped. Spread on the tortillas. I then add whatever else I like...I layer slices of turkey or ham lunch meat (usually 2-3 thin slices per), I've used store bought pesto, red or green pepper slices, any seasoning you like(I use dill), top with shredded cheese. You roll up the tortilla very tight, and wrap in seran wrap. They set best if you keep them in the fridge overnite...when ready to serve , cut them into rounds w/a sharp knife. MMMMMMM good!!

Hey you guys, I've also made the hot dogs and meatballs with the grape jelly and cocktail sauce. I know it's a weird combo but a friend brought it to my house and everone devoured it. When I make it I don't tell people what's in it until after they have tried it.

Cheese Sausage Meatballs:
1 lb turkey pork sausage (Jimmy Dean)
2/3 cup greated chedder cheese ( I like extra sharp)
2/3 cup Bisquick
Mix ingredients in a bowl. Shape them into a little smaller than
golf size balls. Spray sheet size cake pan with a spray
shortening (to keep balls from sticking) & then cook them in
a 325 degree oven for about 40 minutes turning them over half
way through cooking. When cooked render them on paper towels.
Your guests will fall over eachother to get more.

My mom makes chicken wings 2 ways. One way is in barbeque sauce, the other is marinated with italian dressing. You can either grill or bake them. Easy as pie, and very very tasty. Just keep toms of napkins around.

My favorite always is equal parts grape jelly and chili sauce with either meatballs, smoked sausage, or little links, cooked in a crock pot. At the party just keep it warm in the crock pot. Everyone loves it. Sometimes I use a little less grape jelly-I don't like things too sweet. Hope you have a great party!
