Here we are....our first week!
Let's start with a basic rice combination
I use for a lot of variations.
First...Cook a cup of instant white rice
a cup of instant brown rice,
and 1/4 cup of quick barley.
Rinse and mix together after cooking

(If your not busy or lazy like me
you can use the long cooking kind)

Now mix some chive and parsley
and a little finely chopped carrot in with the
rice and barley mixture.

In summer:
Mix in 1/4 cup each of chopped onion,
yellow and green pepper,
cucumber and tomato,
and 1 1/2 cups rice/barley mixture.
Chill and serve with your favorite dressing.

In winter:
Mix in some salsa,shredded cheese,
kidney beans, and heat in microwave
for a hot lunch.
Chicken or beek chunks are additional options.

There are endless possibilities for this basic
rice/barley mixture, use you imagination and
see what you can come up with.
